MURUKKU (CHAKKALI)

Chakkali is one of the most popular Snacks in South India. It is even more popular during Diwali Festival. It is all time favorite Snacks of mine.



Ingredients

2 Cups of rice floor


1 Cup of Moong dal cooked(boiled with water and smashed)



1 Cup Oil
                                                          




1 Cup Besan Flour


1 Cup Black Gram flour(Urad dal/Uddina bele hittu)


1/4th Tablespoon Asafoeteda (Ingu) 


1 Tablespoon Cumin seeds (Jeera)
    


1 Tablespoon carom seeds(Ajwain)


2 Tablespoon Sesame Seeds (Til,Yallu in Kannada)


1 Tablespoon Red Chilli powder



1 Tablespoon Salt





Oil to Fry




Method

1. Mix all the Ingredients in a bowl.

2. Add water slowly to the mix and knead(until it becomes soft) it in such away that it is smooth and pliable like that of chapati dough.

3. Cover the mixture and keep it for 20 minutes.

4. Heat sufficient oil in a pan.

5. when oil seems hot, take out few drops hot oil and drizzle over the chakkali mixture. if it raises to the surface immediately, then the oil is hot enough for frying the chakkali. You can reduce the flame to medium now.

6. Make mixture into small balls and put inside the chakkali making machine.

7. Make chakkali using Star Disc. squeeze chakkali either on a plastic sheet or an the black of a slotted ladle or on a small plate(seal the end of chakkali after sqeezing). 

8. Put  them in a oil and fry both sides until golden brown then remove from oil. Drain the excess oil on a paper towel. 

9. Repeat the same procedure for the rest of the dough.Store it in an air tight container once it cools down.
